Grilled Chicken Caesar Salad
4 boneless, skinless chicken breast halves
3/4 cup thickly sliced mushrooms
1 head Romaine lettuce, rinse, dried and torn into bite-size pieces
1/2 medium red onion, thinly sliced
2/3 cup Creamy Caesar Dressing, divided
Seasoned croutons or your favor it courtons
Parmesan cheese (optional)
Prepare grill or broiler. Grill chicken and mushrooms until chicken is no longer pink and mushrooms are tender. In a large bowl, toss lettuce and onion with 1/3 cup Creamy Caesar Dressing; arrange on platter. Top with sliced grilled chicken and mushrooms. Drizzle with remaining dressing and top with croutons. Garnish with Parmesan cheese, if desired.
